Parmesan Scalloped Potatoes with Spinach

  • 2 ½ pounds of potatoes (thin slices)
  • 3 tablespoons of olive oil
  • 1 small onion (chopped)
  • 3 tablespoons of flour
  •  2 cloves of garlic

  • 2 ½ cups of milk
  • 1 pound of frozen spinach
  • 1 cup of parmesan

Preheat the oven to 425ᵒF. Toss some potatoes brushed with olive oil and make an even layer. Put the baking tray in the oven and let the potatoes bake for about 20-25 minutes.

Heat 2 tablespoons of oil in a separate saucepan. Add onions and allow them to cook for 5-8 minutes till its golden brown. Then add garlic, salt, and pepper and let it cook. Add some milk and stir in everything along with it. Remove the pan from the stove and drain the spinach by squeezing it.

Take the potatoes out of the oven. Take half of the potatoes and place them on the baking dish. Place the sauce on the baked potatoes. Add the remaining potatoes and drizzle some more sauce on it.
