Parmesan Scalloped Potatoes with Spinach

  • 2 ½ pounds of potatoes (thin slices)
  • 3 tablespoons of olive oil
  • 1 small onion (chopped)
  • 3 tablespoons of flour

  • 1 pound of frozen spinach
